# Method:

01 - In a small bowl, gently mix diced avocado, tomato, red onion, jalapeño, cilantro, and fresh lime juice. Season with salt and pepper and set aside.
02 - In a separate bowl, whisk eggs with milk, salt, and pepper until thoroughly combined.
03 - Heat olive oil in a large skillet over medium heat. Pour in egg mixture and slowly scramble until just set. Remove from heat and fold in shredded cheese.
04 - In a small saucepan, heat black beans with cumin, chili powder, smoked paprika, salt, and pepper for 2 to 3 minutes until warmed through.
05 - Heat tortillas in a dry skillet or microwave briefly until pliable.
06 - Lay one tortilla flat. Place scrambled eggs, seasoned black beans, and avocado salsa in the center.
07 - Fold sides over filling and roll tightly to secure the burrito. Repeat with remaining tortillas and fillings.
