01 - In a mixing bowl, whisk together peanut butter, soy sauce, lime juice, honey, sriracha, minced garlic, and warm water until a smooth consistency is achieved.
02 - Arrange bread slices on a cutting board. Spread a thin layer of peanut sauce on four slices.
03 - Combine mozzarella and cheddar cheeses. Evenly distribute the cheese mixture over the peanut sauce-covered bread.
04 - Cover each with a plain bread slice. Spread softened butter on the outsides of each sandwich.
05 - Heat a skillet or griddle to medium. Cook the sandwiches 2 to 3 minutes per side until the bread is golden brown and the cheese has thoroughly melted.
06 - Remove from heat and allow sandwiches to cool slightly. Cut each sandwich into approximately three sticks.
07 - Scatter chopped cilantro over the sticks if desired. Serve warm accompanied by extra peanut sauce for dipping.
