# Components:

→ Olives & Cheese

01 - 1½ cups mixed olives (green and black, pitted)
02 - 200 grams feta cheese, cut into 1 cm cubes

→ Marinade

03 - 3 tablespoons extra virgin olive oil
04 - 1 tablespoon freshly squeezed lemon juice
05 - 1 teaspoon dried oregano
06 - 1 teaspoon fresh thyme leaves (optional)
07 - 1 small garlic clove, thinly sliced
08 - ½ teaspoon red pepper flakes (optional)
09 - Freshly ground black pepper, to taste

→ Garnish

10 - 2 tablespoons fresh parsley, chopped
11 - Zest of ½ lemon

# Method:

01 - Place mixed olives and feta cubes into a medium bowl.
02 - In a separate small bowl, whisk together olive oil, lemon juice, oregano, thyme (if using), garlic, red pepper flakes, and black pepper.
03 - Pour marinade over olives and feta, then toss gently to evenly coat without breaking the cheese.
04 - Cover and refrigerate for at least 30 minutes or up to 4 hours to deepen flavors.
05 - Bring to room temperature, sprinkle with chopped parsley and lemon zest, toss gently, and serve.
